RECIPE: Raspberry Muffins

1 punnet of raspberries
330g all-purpose flour
3 tsp baking soda
Pre-heat oven to 180º
A super quick treat, to make your raspberry muffins all you have to do is mix the dry ingredients together, then mix the egg, butter and milk together and fold into the dry ingredients. Then, gently fold the raspberries into the other ingredients.
Grease the muffin tins and fill three-quarters full with the batter, and bake until done! In the video recipe above you can watch Niall Harbison for a full demonstration.
Harbison began his career as a chef in Ireland's premier restaurant, Peacock Alley, under the guidance of Michelin Star Chef Conrad Gallagher. He became the youngest Head Chef in Ireland of a fine dining establishment in 2001 when he took the reigns at Lloyd's Brasserie(aged 20) where he cooked for the likes of Victoria Beckham and Robbie Williams.
Since then, Harbison has continued to cater to the rich & famous as a private chef on super yachts and in their mansions worldwide cooking for the likes of Bill Gates, at his 50th Birthday party, U2, Lance Armstrong and Mariah Carey. Apart from cooking Niall lists his passions as surfing, travelling, football and Cameron Diaz!
